SuperSlamm
I really like Gurren Lagann's soundtrack.
Ecio
I've recently started to like most of the music Sawano Hiroyuki is making - Blue Exorcist, Attack on Titan. I didn't like Kill la Kill, though. I don't think I watch enough anime to select from a broader scope. I do think the opening and endings for FMA and FMA Brotherhood are some of my favourite ~ Yui, Asian Kung-Fu Generation, etc.
lemmingllama
Well, there are three soundtracks that I listen to music from on a regular basis: Death Note, Panty and Stocking with Garterbelt, and Gatchaman Crowds. Also will make a side note that most of the Ghost in the Shell soundtrack is pretty awesome too.

Tanis
Not sure, but Yoko Kanno probably worked on it.

Assuming you are talking about Death Note, no she didn't (I added a link to all her works). It was actually Hirano Yoshihisa who did L's Theme if I remember correctly

† poetictragedy
I love the UtaPri soundtrack right now. Obviously, an anime about music should have a good soundtrack. I also like the music in Macross Frontier and Shingeki no Kyojin.

Nintendon't
.hack//Sign hands down. Say what you want about the quality of the rest of the show, but the soundtrack/music is freaking fantastic. One of the best anime opening songs ever and that unique background music....so good that Bandai even went through the effort of slapping a music only track on the DVDs. † ParasiteEve
Anything Yoko Kanno does is amazing to me.I'm also a fan of Kenji Kawai, he did Ghost in the Shell: Innocence and When they Cry.But FLCL is probably my most listened to soundtrack, I got super addicted to The Pillows and that turned me on to Japanese music.
