So, I was asking my friends about the ending of Gravity Falls. One of them said that it needed a season 3 but then the other said it ended it exactly where it should've. I was wondering if you would be able to help me solve this dispute.

Personally, I think its both.
It did end exactly where it should have, however, they left it perfectly open for future content IF they decide to go that route.
(Although, if they do, there will likely be no more journals.)

We could have the adventures of Grunkle Stan and Ford cause season 3.
Stan is regaining his memories, which means Bill may return also.
Bill saying "A-X-O-L-O-T-L MY TIME HAS COME TO BURN, I ENVOKE THE ANCIENT POWER THAT I MAY RETURN" backwards when he died.
When Dipper asked the Axolotl what he knew about Bill, the response was:
Sixty degrees that come in threes.
Watches from within birch trees.
Saw his own dimension burn.
Misses home and can't return.
Says he's happy.
He's a liar.
Blame the arson for the fire.
If he wants to shirk the blame, He'll have to invoke my name.
One way to absolve his crime.
A different form, a different time.

I'm not sure if this actually leaves it open for Bill returning, or if it means Bill already has canonically returned as one of the cast of the show, such as Grunkle Stan (We'll meet again, gold, etc.) or Gompers.

There are plenty of ways they could continue Gravity Falls if they chose, however if they cannot think of the right way to do it that doesn't diminish the currently existing show, the current ending perfectly suffices.

The new info in the Real Life Journal 3 Special Edition is rather cool, almost like a mini-season all to itself, if they did Journal 2 and 1, that'd be a lot of new content.
