Gaara has more control over sand than crocodile, since Gaara can move larger quantities faster and easier than crocodile. Crocodiles only trump is being sand and the ability to turn anything into sand.

When people fight them, how come no one uses fire? they could just turn the sand into glass.

Fire wouldnt have the neccessary heat. They would need to use lightning in order to instantly turn it to glass. And i have thought of this too, sasuke vs gaara in shippuden would be exciting to watch.

I know normal fire attacks wouldn't have that instant effect, I was going for a realistic pro-longed battle like most good fights are.

which is like so obviously why they never fight anyone that can melt their sand into glass, though croc could just turn it back into sand again.

so I like croc more as a sand man but gaara as a character.

They would have to repeatedly hit one section of sand with fire that was really hot in order to start to melt it. It probably wouldnt happen... So lightning makes more sense, glass is found naturally in deserts after lightning storms

against croc it wouldn't be much effective.

but since gaara is limited to what he carries on his back constant fire attacks would heat up all of his sand.

But yeah they ignore this detail for gaara because sasuke hit him during the chunin exams with chidori and the sand was still sand.

Crocodile can turn into sand himself so Gaara wouldn't be able to hit him or crush him or anything with any of his attacks. He could then poison Gaara with his hook. Overall Gaara may be more powerful but Crocodile would still have the advantage and likely win.

Gaara can manipulate sand with a thought. After croc turns to sand, Gaara controls him and sends individual grains far away. Then crocodile cant do anything and dies

So can Croc. I'm pretty sure he'd be able to keep himself where he wants. Besides, just because Gaara can move sand, doesn't mean he can distinguish regular sand from Croc when he's sand. Gaara would essentially have to do away with all his sand to ensure Croc is gone, which would also leave Gaara open, then Croc can still pull himself back together out of Gaara's reach. Croc could easily embed part of his-self into the sand-armor Gaara always wears without Gaara being able to tell.

This seems to be a null thing right. Croc is sand Gaara controls all forms of sand. Hence when Croc trys to use his devil fruit ability he gives Gaara all the advantage he needs. Croc would need to do some pretty intresting stuff to win the battle. Like posing as some of Gaaras sand with out Gaara noticing then take form and attacking him from behind. Other wise this battles far to one side. Its like the shocker from marvel attacking zues it just doesn't work.
