How does one create a phony/disposable email address?

Gmail is probably the easiest, make a new email address with generic names and a generic address, then when you want another email address to use, just use the first part of that gmail address and add "+<descriptive term here>" before the at gmail.com part.

I.e. ThisIsAnEmailAddress@gmail.com can also branch off to ThisIsAnEmailAddress+email1@gmail.com and the emails from that second email address will go to the first.

I had no idea you could jus make up random shit with gmail this ended up working perfectly thanks

No problem. The other handy feature (don't know how much of an organiser you are) but you can have gmail label those "+email1" with the email address it came from (easier to find if the sea of your inbox).
