JohnFlower
The browser itself is pretty stable. It will hardly ever crash, if that is what you're worried about. The only problem with the nightly builds are the constant updates. There are bound to be bugs with the new features they are implementing, namely the new rendering engine (Blink). The current build I am using (Version 31.0.1612.0 (219662)) is good enough for every day browsing, and you could stay on this build for a long time if you wanted. No one forces you to update the browser, but it is recommended to do so to stay on top of vulnerabilities. I try to update at least twice a week. For your needs, I'd say at least once every 2 weeks, maybe once a month max.
ZeroPenguins
Well if you're lazy to update, there are update scripts or programs that will update it for you. But seeing that you're on a limited bandwidth, might as well stick to Chrome.
Xanders
I though chromium updates itself automatically like chrome
Dae314
No, chromium will not update itself. It will only update when you download another mini installer and install it yourself.
