Most of what I cook isn't really exact on proportions, but here goes!

Macaroni and Cheese

For a single person as a full meal, or up to three as a side dish.

1 cup noodles. Elbow macaroni works best.

2.5 cups water in a pot that is made no more than half full by this.

1 chunk of cheddar cheese, size varies based on preference

1 chunk Pepperjack cheese, same size (Can substitute any other kind of cheese if you prefer)

1/4-1/2 cup milk

1/3 cup butter, or margarine.

Bring the water to a boil over med-hi heat.

Reduce heat to med, and add noodles. cook until tender, stirring occasionally.

While boiling and cooking the noodles, grate both cheese chunks into a large enough bowl to hold all of it, mixing is not required at this time.

When noodles are tender, remove from heat, and drain remaining liquid.

Return noodles to pan and add butter, stir until mostly melted before adding 1/4 cup milk

Return to low heat, and slowly add both types of cheese. Adding more milk if needed until desired consistency has been reached.

Spice to taste.

Optional ingredients.

(pick only one if you use any)

1/4 pound ground beef. (brown in a skillet prior to adding.)

4 slices fried bacon (chopped)

1/4 pound chopped chicken breast meat. (cook thoroughly)
