I recommend you take a look through MAL and take a brief look at some synopses etc although... My personal favourites (with the version I have archived):  Steins; Gate - great characters, awesome plot (sci-fi/time travel/psycological) [Deanzel] 720/1080p  Psycho-Pass - great action, very "mature" for an anime though which I personally enjoyed however it is very intense at times, wouldn't recommend to a younger viewer. (dystopian/action/crime/psychological) I have [Kametsu] for both seasons + movie in 1080p  Attack On Titan - superb action and animation, an intriguing plot with plenty up its sleeve (Action/distopian) [Kametsu] for 1080p, [Baal] for 720p  Terror in Resonance - fantastic execution in my opinion. Great soundtrack, animation, characters and storyline; just wish it was longer! (action/psychological/terrorism/conspiracies) [Kametsu] for 1080/720p  Cowboy Bebop - An absolute classic, just watch it (sci-fi/western/blues) [CTR] for both resolutions  Fate Zero - Ufotable <3 and its got an awesome action filled plot = great anime (action/fantasy/magic/psychological) [Deanzel] both resolutions  Samurai Champloo - good music, funny, action packed definately worth a watch (action/samurai/comedy) [NinjaPanda] for 720p/480p  Fullmetal Alchemist Brotherhood - as @Animemaster already mentioned is definitely worth the watch. (Action/Alchemy) [ShadyCrab] for 1080p  Parasyte the Maxim - Great action, gripping plot think a more intelligent Tokyo ghoul (Parasites/action/morals) [MK-Pn8] although needs patching I believe as of now.  Death Note - awesome characters great plot and execution had me completely hooked (Psychological/justice/crime/intelligent) I have FMA's for this, I think you can grab it on Bakabt.  For movies make sure you have watched everything by Studio Ghibli I cannot recommend those movies enough! Also:  Empire of Corpses - weird, but kinda unique, superb animation and setting worth a try! I have [Kametsu]  Mamoru Hosoda films! Girl who leapt through time [REVO] Summer wars (can't remember what I have for this lol Coalgirls maybe?) Wolf children [Cman] The boy and the beast [Kametsu]  Makoto Shinkai films! Google it!  Satoshi Kon films! Google it!  Sword of the Stranger - action filled masterpiece! I have [REVO]  Redline - stylistically beautiful, I have [THORA] iirc  Hope these help a bit all of the listed versions are dual audio and are definitely worth a watch, in my opinion anyways, I have far more and could write in more detail but it takes a long time to write everything out!
